Baked avocado fries are a great way to get your healthy fats in for the day and they taste delicious. You can make them thinner or thicker depending on how crunchy you like them to be. Make a spicy chipotle mayo sauce to dip them in and your golden. Best eaten fresh out of the oven. Enjoy!
• 2 avocados
• 1T olive oil
• 1/2C panko bread crumbs
• 1/2C bread crumbs (I used rice flour bread crumbs)
• 1 egg, beaten
Preheat the oven to 400° and grease your baking pan with olive oil or oil spray. Slice an avocado in half and then cut each half into four or five pieces. Beat your egg in one bowl and mix your
